Sourdough Cornbread Muffins

These guys taste just as fancy as they look while being very easy to make. The tancy sourish-sweetish taste pairs well with most any other dish but particularly with spicy dishes. 

 

TIP: if you need them early in the day, you can make the dough the night before and let it rest in the fridge over night. If you bake the them while the dough is still cold, check to see if you have to add a minute or so to the baking time. Just insert a tooth pick or pointed knife to see if it comes out clean. If it doesn't add to the baking time.
